It is common sense to us all, that all plants need minerals to grow. If the soil is to acidic or mineral deficient, plants cannot survive or are of poor quality. The same theory can be used upon humans. If the nutrition and mineral intake is low or of poor quality, the body will be slower to heal and repair. Why not make a conscious effort to increase more fresh fruit and vegetables into your diet. Cooking with fresh ingredients can be delicious and fun. Ask Duncan how to prepare your favourite fruit and vegetables with maximum health benefits. Why not plant some fresh organic herbs or vegetables into some organic soil. It is surprising how flavoursome your very own herbs and vegetables can be!

I find it interesting watching My Kitchen Rules that people always want to cook beyond their skill level. Cooking great quality food and keeping it simple is a core rule I teach our clients on daily basis. Once you have an understanding of the basics and knowing what works then & only then you can start pushing food to a higher level.
What is more incredible is that my students aged 15 students can easily put out a 4-5 course dinner with out making a mess of the experience.

With the 2010 school year upon us there are a million and one thing’s that parents need to do to get organized and get their kids to off school. Dinner’s and simple snacks seem to be the most daunting to most busy parents.
Our mobile cooking courses teach you much more than just how to cook some food, we spend a lot of time teaching you how to live a healthier, more organized lifestyle. Organization is the key to success and once you learn these simple steps, you will wonder why you didn’t do it sooner.
Here some ideas for dinners & snacks:
Set yourself up with a Menu Plan for the entire week, including snacks. It is important to note the days where your children have after school activities. On these days, plan for quick meals such as Grilled Fish and Salad, Hamburgers or Braised Meatballs and Spaghetti just to name a few.
Try to include your children in the menu planning, shopping, preparation and cooking as much as you can. If children feel that they are playing an important part of the weekly meals, then they are more than likely to value food more and be more interested in eating it. Really, they are learning some essential life skills which will benefit their futures.
Experiment with having themed dinner nights. Children love themed dinners and they can even dress up for them to make it more exciting. For example, Friday night can be Mexican night or Tuesday can be home made pizza night! Make the pizza bases and prepare all of the toppings and let everyone build their own pizzas! This will give them a sense of inspiration and confidence and better yet, they get to eat their final product.
Bake a large batch muffins and wrap them individually, date them and freeze. These are perfect for school lunches. Just place the muffin straight from the freezer into your child’s lunch box and it will be at the perfect temperature for a late morning or afternoon snack and it will help in keeping the lunch box contents cold.
Try making a frittata cooking them in individual muffin tins. These are the perfect size for an after school snack or lunch box snack. Mix the ingredients up and use veggies that are bright and colorful. Why not top off some of the frittatas with a little grated cheese.

I’d been wanting to learn how to cook properly for a long time. I’d come from a history where ‘burning water’ was easy. When Duncan from Fuller Tummy came to my home, he really turned things around. Duncan is patient, the recipes are easy to follow, and the end result tastes great!. I specifically liked the skills gained in the shopping trip with selecting fresh foods and planning the week’s menu. He didn’t just teach me to make a few dishes, he also taught me generic skills beyond the recipes. I’ve now got the skills and confidence to expand my weekly menus and have put some new and exciting twists to many of the dishes I now make. I can’t wait to do the next course to extend my skills further!

Christmasis here and with that comes all of the cheer! Your liver is the organ that suffers the most during this festive time, why don’t you be friendly to your liver this silly season and give it some support by adding these three simple steps to your holiday regime:
1. squeezing 1/2 lemon in 100ml of room temperature water upon rising. This will kick start the liver and gall bladder for the day!
2. Take Milk thistle. 3500mg after breakfast each morning. This is a fantastic herb that will support the liver function. (please seek medical advise if you are taking any medication)
3. Juice it up! Next time you are out for a coffee with a friend, try a juice instead! Or at home, try making a refreshing juice each day of the festive season.
Liver juice: carrot, apple, celery, ginger, radish, beetroot.
Refreshing juice: Orange, Kiwifruit, lemon and grape fruit with a hint of mint. Once this has been juiced, blend it in some ice and enjoy on a hot summer afternoon!

This time of year the question I’m asked the most is: How do I cook for my family with out the massive work load and stress that goes with it? In all our courses the number one rule to get your self organized is planning. It doesn’t matter how small or large the task a good plan will reduce the costs, time, stress and allow the home cooks to enjoy them selves as well.
Here are some tips to make this Christmas season more enjoyable for The Christmas Cooks of SE Queensland.
Write a menu for the week: Even though your focus is for Christmas day you still need to eat. Plan the days leading up and past Christmas. This will minimize your trips to the shops, reducing time, money, fuel and the S – word ‘stress’.
Menu Items: Design dishes that can work off similar ingredients. For example a large batch of roasted vegetables such as: pumpkin & sweet potato can be used in many different dishes. These can include accompaniment to a main course, salads, risotto’s, pizza’s and pasta’s to name a few. This small step will reduce your food costs, storage and preparation time.
Planning: The most important sheet in any kitchen is the ‘preparation sheet’. If you break your food preparation into 3 groups you will be very surprised by how much work can be done in advance. For example:-
List 1 – items such as meat & poultry stocks, pastry, cookie dough, stuffed filo parcels, sauces can be made a frozen in advance.
List 2 items that last for a couple of days such as marinades, jellies, condiments, puddings, fruit sauces, custards, petit fours to name a few can be made.
List 3 The day before and the day of you can use all your pre – prepared items and your last minute preparations to serve the best Christmas spread you have ever made.
Left Over’s: It’s really important that if you plan to re use food make sure it hasn’t been sitting out to long in the exposed air or warm temperatures. Many people can get very sick this time from eating food that is spoilt. If you feel there are items that you want to re use only put out what is needed and keep the rest refrigerated.
Cleaning up: If possible try to clean as you go, or nominate a helper with small jobs and food preparation! Remember the cook doesn’t wash up, especially at Christmas time! The cooks have to have to enjoy Christmas to!

Calling all Shoppers!
One of our main goals during our ‘Fuller Tummy Level 1′ course is teaching our clients how minimize the cost of groceries while maximizing their ingredients for the weekly menu plan.
Here are some key points that we teach our clients during their shopping tour with our Chef
- Always buy in season
- Check with your local council & find out the nearest weekend farmers market
- Buy local as much as possible
- Purchase your ingredients at your local butcher, fish market, green grocer & independent grocery stores
- Build a relationship with your local shops & refer family & friends
- Start a herb garden even if you have an apartment, a small pot of herbs can easily fit on most balconies
- If you have a backyard start a fruit, herb & vegetable patch, this can be a fantastic hobby for the family & it will save you money over a short period of time, not to mention fresh produce at your door step!
- Always have a weekly menu plan organised & take a shopping list. Stick to the list and stay away from non essential impulse purchases
- Buy fresh ingredients & produce food from scratch
- Shop around, compare prices and ask for deals
- Don’t be afraid to ask for ingredients of a better quality: ask to smell fish so it has a sweet salty smell versus and old stale smell. It’s your money & you work hard for it! Only buy the best for your family.

I have just been made aware that Fuller Tummy has been nominated for the Weight Watchers Healthy Life Awards Community Business of the Year.
I had in-home cooking lessons from Fuller Tummy a few months back and would highly recommend them for this award.
From the first point of contact I found Duncan to be extremely professional, well organised and a pleasure to deal with.
Because I am vegetarian Duncan created a recipe book for me based completely on vegetarian and vegan options and the layout of the book was very professionally done. It was easy to understand and included some great healthy tips.
On my first lesson with Duncan I found him immaculately presented, punctual and he had everything planned for the day. He is a genuinely nice person with a great personality and you cannot help but to warm to him straight away.
I had a series of about 10 lessons with Duncan in my home and learnt how to create some fabulous dishes. Before I had my lessons I was a pretty mediocre cook but now thanks to Fuller Tummy I am a much more confident cook. Because of this new found confidence, I created a lunch menu for the people at my workplace which consisted of healthy vegetarian food which was prepared by me.

Hi Duncan,
We’d just like to take this opportunity to thank you for the amazing Level 1 course. We put out the challenge to you, we wanted to eat healthy and lose weight, and you have certainly helped deliver that. The results and the comments on our weight loss from Family and Friends are amazing. Nancy has lost 21kgs, and I have lost 18kgs. By taking a few hours out of one day a week and following your amazing meal plan preparation ideas, it’s made meals times less stressful and enjoyable. Our shopping trolley is now full of Fresh Fruit and Vegetables, and not the pre-packed stuff, biscuits, chips, ice-cream, and other junk foods. You have also converted our son Nathan to wanting to eat healthier. He can’t get enough of the GOOD FOODS!
